Quarantining in South Korea

It is currently Friday at 11:30 a.m. Best discovery during quarantine so far: Korean fried chicken! I didn’t believe that fried chicken could get any better, but Korea has done a very good job at proving me wrong. Despite being delivered, its remained extremely crispy.

I’ve done some research and figured out why. Korean fried chicken apparently uses potato starch as coating and will sometimes have a bit of wheat flour mixed in. One surprising technique used is that it is fried twice, once at a lower temp to cook the chicken and a second time at a higher temp to crisp it up. I’ve used this technique on fries but never on chicken before. Pretty interesting to me.

The seasonings here are really good, but I can’t quite figure out what they are. And “assorted fries” are my new favorite thing. I plan to venture out and try a more traditional Korean cuisine tonight! Sorry this is just a long post about food, but it is about the most interesting thing about my days in quarantine.
